Fattoush Salad
This salad is always a hit. Full of flavor, easy to put together and can easily be a meal on its own. You can adjust the quantities of practically everything here to suit your family’s tastes.

SERVES: 4-6
INGREDIENTS:
1 Yellow Onion, sliced as thin as you can manage
1-1/2 to 2 Teaspoons Sumac
Juice of 1 Lemon
4 Tablespoons Olive Oil
1 Garlic Clove, minced
3 Teaspoons Za’atar
1 Teaspoon Salt
1 Cup Red Cabbage, shredded
½ Yellow Bell Pepper, julienne strips
1 English Cucumber**, chopped into largish chunks
2 cups Lettuce Leaves, Romain preferred, coarsely chopped
2 Tomatoes, coarsely chopped
½ Bunch Fresh Parsley, finely chopped
¼ Cup Fresh Mint, finely chopped
DIRECTIONS:
- Combine onion slices with sumac in a bowl, massage sumac into onion, let sit for 10 minutes.
- In separate bowl combine olive oil, lemon juice, garlic, za’atar and salt. Add onions and remaining ingredients. Toss to combine. Add additional spices if needed.
NOTE:
*Serve with grilled Pita bread
**English Cucumbers are easiest to find, but if you manage to find a Lebanese Cucumber that would be ideal.
